What I love the most about vegetables is the variety of colors, textures and tastes that each one has. Some vegetables are crunchy, while others are soft. Some vegetables have a thick skin, while others tend to crumble with the smallest amount of force. I have eaten many vegetables over the course of my life. Some I tend to eat again and again for the ease in preparing and cooking. Some I don’t eat as much as I should due to unavailability or lack of culinary skills. Almost all of the vegetables I love to eat in its raw glory. Many of them I have been enjoying eating after roasting them in the oven. A few of them I have only ever used in soups or stews, mixed with other groups of food. However, they are prepared or eaten, here is my definite list of 7 of my favorite vegetables. And then, be sure to check out 7 of my favorite fruit.
1. Bean sprouts
2. Baby corn
3. Water chestnuts
4. Potatoes

5. Seaweed
6. Cucumbers

7. Celery

You’ve got about all of ’em listed here (except potatoes; okay, but not among my favorites).
Then I’d add bok choy, choi sum, beets, snow peas, and spinach. Good eats, all!

What the heck are lady’s fingers? I only heard of that referred to as a type of cookie, or the cake part of tiramisu. Not a vegetable. Is the vegetable version of ladies fingers a Green bean type of vegetable, or some kind of edible flower?

LOL I had to google that too. It looks like it’s a British English term. It’s another word for okra.

Are water chestnuts not edible when they are fresh, like with olives? Like olives, I’ve only seen them at the grocery store in their processed form.

Good question!! I’ve only ever eaten them cooked like in a stir fry. A quick google search told me that they can be eaten raw though

I think my favorite veggies would have to be potatoes (all kinds) and broccoli. I’ve actually just tried water chestnut recently and they added such a nice crunch to my stir fry 😍
